Unbelievably Delicious, Low Carb Keto Pizza
Pizza.
How can one word elicit so many emotions?? If you are just starting Keto, you probably don’t think about Pizza…yet!! If you were a pizza eater before though…just wait! It is coming.
Now, I have tried the whole…scrape the toppings off and eat them approach. It isn’t bad, but it isn’t the same. When you really need that Pizza flavor and fix though, it will do in a pinch. I can’t help but feel though that it is a bit of a TEASE!! haha
I have read a lot about the fathead pizza dough recipes out there. I have also read mixed (mostly not great) reviews, so I was apprehensive about going that route.
I am certainly no chef, but I know what I like and when I cook or bake, I always add a bit of my own twist or take on the recipe.
In this case, bring on the Garlic!!!! (Garlic is life..no, just me? Ok)
The pizza is quick and easy to make, the dough gets crispy and flavorful, and this was my EXACT delivery pizza order. 100% and honestly, the taste was at least at the level of any pizza I have had in the past if not a little better. (I mean, I got to decide how much of every topping I wanted – which was a LOT).
You won’t spend more than 30 minutes making this Pizza – I was trying , and failing, to make my 2nd ever TikTok video (stop laughing) while making mine and I was still under 30 minutes. GO FOR IT!!
Low Carb, Keto Feta and Pepperoni Pizza
Equipment
- Pizza Pan
- Mixing Bowl
- Silicone Mixing Spoon or Spatula
- Pizza Cutter
Ingredients
Pizza Dough
- 1 Egg
- 2 Oz Cream Cheese
- 1 ½ Cups Shredded Mozzarella Cheese
- ¾ Cup Almond Flour
- ⅓ Tsp Baking Powder
Toppings
- Marinara Sauce Low Carb
- 1-2 Cups Shredded Mozzarella Cheese
- 1 Tbsp Crumbled Feta
- 16 Pepperoni Uncured
- 2 tsp Oregano
- 1 pinch Garlic Powder
Instructions
Crust
- Preheat the oven to 415°F (212°C)
- Microwave the Cream Cheese and the Shredded Mozzarella in a medium sized mixing bowl for 30 seconds. Remove from the microwave and stir the mixture with a silicone spoon or spatula. Repeat 1-2 times until fully melted. (It took 3 times for mine to be just right.
- Once your cheese is melted, add the other crust ingredients and mix with your spoon or spatula until combined.
- Now use your hands to knead the dough until you get the right consistency that is smooth, fully combined and feels like a bread dough.
- Form dough into a ball and transfer to your greased pizza pan. (I sprayed mine with coconut oil)
- Us your hands to flatted out the dough so that it is evenly distributed across the pan.
- Use a fork to pierce the dough, make sure you get all the way through so that it doesn't bubble up in the oven. (a few of my form punctures didn't go all the way through and my dough started to balloon, so I opened the oven and gave it a few additional pokes)
- Bake at 415° fro 12-15 minutes. (Until it is nice and brown) It took the full 15 for me.
- Remove the baking pan from the oven, now it is time for toppings. I let mine cook off a bit so that I could place things like pepperoni with my hands.
Toppings
- Use several tablespoons of low carb marinara sauce to cover the center of the pizza, leaving about an inch of crust around the whole pizza. Make sure the sauce is evenly distributed and thick enough that you cannot see the crust through the sauce.
- Sprinkle the sauce with the Garlic Powder and 3/4 the dried Oregano.
- Sprinkle enough shredded Mozzarella to cover all of the sauce.
- Add a layer of pepperoni, covering the pizza in a design you like, covering the entire pizza so that you get plenty in every slice.
- Sprinkle more Mozzarella cheese over the pepperoni.
- Spread feta crumbles over the pizza, enough so that there is some on every slice.
- Sprinkle the remaining oregano.
- Bake for another 8 minutes
- Allow the pizza a few minutes too cool, then use a pizza cutter to slice into your desired number of slices, I made 12.
- Serve, and enjoy!
