The Best Keto Peanut Butter Cookies
Elimination diets can be TOUGH! As soon as someone tells you that you can’t have something, you obviously just want it that much more. The reason Keto is a lifestyle you can follow is that reducing carbs does not mean eliminating the things in your life you love – only subbing ingredients!
I bake cookies at least once a week, and while I haven’t yet met a cookie I didn’t like, most of my non-keto friends make comments about the texture or sweetness (lack-there-of). No such comments are ever made about these! In fact, I often find there are very few left over for me!
They are very quick and easy to make – don’t skip the sifting step. It makes a world of difference.
Keto Peanut Butter Cookies
These cookies have incredible texture!
Equipment
- Sifter
- Cookie Sheet
- Mixing Bowls
- Spatula
- Cookie Scoop
Ingredients
- 4 Egg Yolks
- 2/3 Cup Peanut Butter Sugar Free
- 1/2 Cup Confectioners Swerve Powdered
- 1/4 Cup Almond Flour Sifted
- 1 Tsp Pure Vanilla Extract
Instructions
- Preheat Oven to 350
- Separate yolks and add to a medium sized mixing bowl
- Sift your almond flour into the yolks. This helps keep the cookie texture smooth and not grainy.
- Measure out the remainder of ingredients into the mixing bowl
- Mix everything together with your spatula until it is smooth
- Use your cookie scoop to place cookies on cookie sheet. I like to roll the dough into perfectly round spheres before placing them.
- Use a fork to create the crosshatch pattern on top of the cookies and gently press and form them into perfect little cookies.
- Bake for 7 minutes
- Let the cookies cool and firm up.
