Simple Keto Pretzel Bites you will LOVE!
Have you ever noticed that you start to love some of the same things the people who you love, well, love? That is a lot of repeated words, but the concept led me to the idea that I needed some pretzels in my life, in low-carb style.
I recently made Keto Pizza, that was AMAZING.
I started to consider the dough and the other uses. This application turned out amazing!! I tried a few different dipping options – the sugar-free BBQ was hands down my fave, though Peanut Butter was a close 2nd. I ended up filling a small ramekin with BBQ sauce and enjoying a good portion of the bites that way. Blue Cheese dip was delicious also!!
If you haven’t tried fat-head dough, it is time!! I usually like a crispier pretzel than these turned out. Next round I’ll probably roll them a little thinner, rope them into pretzel and press them down flat. Stay tuned!!!
Low-Carb, Keto Pretzel Bites
Ingredients
- 3 Cups Shredded Mozzarella Cheese
- 2 oz Cream Cheese
- 3 Eggs
- 2 Cups Almond Flour
- 1 Tsp Baking Powder
- 1 Tbsp Coarse Salt
Instructions
- Preheat the oven to 400
- Microwave the Mozzarella and Cream Cheese in a medium bowl. Use 30 second intervals, stirring between until melted. Approximately 2.5 minutes.
- Combine Almond Flour, Baking Powder, 2 Eggs and Cheese Mixture into a dough. I used the dough attachment with my KitchenAid Stand Mixer, but you can do this with a silicone spatula. I suggest and use silicone products often, as I find them the easiest to clean and work with. They are also heat resistant, so if I … accidentally … leave them say, on a frying pan while making eggs…cough cough…they don't melt or burn…or catch fire.
- The dough will be slightly sticky, but easy to work with if you cover your hands lightly with oil. I spray mine with coconut oil.
- Separate dough into 8 equal sized balls of dough.
- Roll the dough into ropes around 1" thick. This works best over wax paper so that it doesn't stick.
- Use a sharp knife to cut the rope into 3/4"-1" bites. Arrange on a cookie sheet lined with parchment paper or a non-stick baking silicone mat.
- In a small bowl with a basting brush, mix up the 3rd egg and brush over the bites.
- Sprinkle them with the coarse salt, I use a pink Himalayan salt grinder.
- Bake at 400° for 12 minutes
- Switch the oven to broil for 2 more minutes
- Allow the bites to cool, this won't take long, and enjoy!
